  • 1/2 cup diced red bell pepper (about 1/2 medium bell pepper)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions (about 2–3 green onions)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Directions

Sauté the Chicken and Veggies

Heat olive oil in a large oven-safe skillet over medium-high heat. Add the diced red bell pepper, corn, and shredded BBQ chicken. Cook for 3–4 minutes, stirring occasionally, until the veggies start to soften and the chicken is warmed through and coated in BBQ sauce.
